DEPARTING LAS RWY 25R; PDC INDICATED MEAD 2; MAINTAIN 7000 FT; EXPECT 15000 FT 2 MINS AFTER DEP. APPROX 5 MINS LATER; XING 280 DEG RADIAL AT 7000 FT ON AUTOPLT; PNF SELECTED 9000 FT ON ALT COMMAND. ACFT CLBED ABOVE 7000 FT BEFORE DEP CTL CLRED US TO 15000 FT; ON COURSE. PREVIOUS EXPERIENCE AT THIS ARPT LED CREW TO EXPECT HIGHER ALT BEFORE XING 280 DEG RADIAL. A BETTER COURSE OF ACTION WOULD HAVE BEEN TO LEVEL AT 7000 FT AND DISCUSS WHY PNF THOUGHT WE WERE CLRED TO 9000 FT. SUPPLEMENTAL INFO FROM ACN 515861: ON TKOF WE GOT AN ECAM WARNING OF AN ENG OVERTEMP. WE WERE FLYING THE SID ON NAV IN CLOSE VISUAL CONTACT WITH PRECEDING ACFT. WE HAD VISUAL TFC CALLED OUT TO US JUST AS WE LEVELED OFF. I; AS PNF; BRIEFLY LOOKED DOWN AND SAW A 9000; AT OR ABOVE RESTR; WHICH ACTUALLY APPLIED TO A DIFFERENT RWY'S RESTR. I WAS THINKING IT WAS A CLRNC UP TO THAT ALT; SO I DIALED IT INTO THE ALT SELECT WINDOW. THE FO QUESTIONED THAT; BUT WAS USED TO THE NORMAL CLRNC TO 15000 FT AS SOON AS WE GOT TO DEP CTL. IN THE CONFUSION OF THE MOMENT; I FORGOT THE ORIGINAL CLRNC TO 7000 FT. DEP CTL SAID NOTHING AND MAY NOT HAVE EVEN NOTICED WE WERE CLBING. TO ME THE BIGGEST PROB WAS THE MULTIPLE NUMBER OF RESTRS FROM SEVERAL RWYS ON ONE COMMERCIAL CHART PAGE.
