CRJ-700 flight crew reported two instances of loss of aircraft control due to severe turbulence during climb. A Flight Attendant was injured and a portion of the landing gear seal was damaged as a result.

CRJ-700 flight crew reported two instances of loss of aircraft control due to severe turbulence during climb. A Flight Attendant was injured and a portion of the landing gear seal was damaged as a result.
Narrative
Before taking off in ZZZ we were notified by ATC that the weather station had picked up a wind shear waring on Runway XX as we were taxing out. Upon reaching the end of the Runway XY the Runway in use we were given another wind shear warning by ATC for wind shear +20 knots on Runway XY. I elected to delay taking off until that winds hear warning was lifted by ATC. After the warning was lifted we took off. Upon crossing 10 thousand feet I reached up and turned the sterile sign off. We had spoken to the crew that brought the plane in and they said the ride had been smooth. Looking at the weather there were thunderstorms to the north west of us but they were more than 50 miles away when I turned the sterile sign off. Additionally; we were following another company aircraft that was lower who had not reported any turbulence than us; so I didn't feel like we were at risk for any sever turbulence. Shortly after turning off the sterile sign we hit a pocket of sever turbulence causing the autopilot to disengage. I called the flight attendants right away to tell them to take there seats. We had a momentary loss of pitch control with +-30 knots of airspeed fluctuation (we only lost control over the pitch axis I still had control on the role axis and was able to maintain heading). After exiting the first pocket of turbulence I made and announcement to the passengers that we were experiencing turbulence and that I needed them in there seats with their seatbelts on for the flight. After exiting the first pocket of sever turbulence we shortly there after hit another pocket of sever turbulence that once again caused the autopilot to disengage. This caused us to again have a momentary lost of control over the pitch axis and +-25 knot airspeed fluctuation. After going through the second pocket of turbulence I called the flight attendants to make sure they were alright and notified Dispatch. The flight attendants told me they were alright and we contained on to ZZZ1. 20 min after I made my first announcement to the passengers about the turbulence I made a second announcement asking them to stay in their seats.Upon landing; I found out that My flight attendants Person A had sustained minor injuries (a cut on his right hand--bandaged with supplies from the medical kit; a bruise on his right knee and he hit his head on the ceiling panel over row XX as he was making his way back to his seat. Inspecting the aircraft after landing in ZZZ1 we found that the ceiling panel over row XX had become dislodged; the seal around the right landing gear had become dislodged and was hanging out the bottom of the plane. Per the FOM I called Dispatch to notify them. I also reached out to the chief pilots office; and the cabin supervisor to get them all up to speed on Person A's injury and the incident. Person A elected to continue on with the trip and I made sure that he was okay and noticed inflight and the chief pilot that he was electing to continue on.
Second reporter narrative
We had flight ZZZ to ZZZ1 and before we taking off we were notified by ATC that there is a wind shear warning on Runway XX. Once we reaching the Runway XY ATC give us another wind shear warning on Runway XY. So we delay to take off until that wind shear warning was lifted by ATC. Once wind shear warning was lifted we took off.Once we took off passing 10000ft Captain turned the sterile sign off and we turn on the radar. There were thunderstorms about 50 miles away; and there is company ahead of us didn't issue with turbulence or any reports. And couple seconds later we hit a pocket of severe turbulence; it causing autopilot disengage. So Captain try to aviate and try to follow flight director and maintain speed but it was plus minus 30knots of airspeed fluctuations. We only lost pitch axis. After exiting the first pocket of turbulence Captain made an announcement to the passengers and turn seatbelts on.After exiting the first pocket of severe turbulence we hit another pocket. Autopilot disengaged again and momentarily lost of control over the pitch axis and plus minus 25kts airspeed fluctuations. After everything stabled Captain announced to passengers to stay seated; and ask the flight attendant everyone okay; but one of our flight attendants Person A had minor injuries (cut on his right hand and bandaged with supplies from the medical kit; a bruise on his right knee and he hit his head on the ceiling panel over row XX as he was making his way back to his seat) after landing in ZZZ1 we found that ceiling panel over row XX had become dislodged; the seal around the right landing gear has become dislodged and was hanging out the bottom of the plane.Captain called Dispatch to notify and called chief pilot officer.
