CHANGED EQUIP FROM B767-300ER TO B757. FLT DELAYED. 10 MINS PRIOR TO DEP; HUMAN ORGANS ARRIVES AT ACFT. NOW FLT IS LIFEGUARD CATEGORY. WE CHKED FLT MANUAL PART 1 FOR ALL NECESSARY INFO; AND NOTIFIED DISPATCH. AFTER BEING HANDED OFF TO ZHU; WE WERE OFFERED AN EXPEDITED HANDLING; AND ACCEPTED CLRNC PRESENT POS DIRECT MIA. I NOTIFIED DISPATCH OF THE RTE CHANGE. MINS LATER; ATC AMENDED CLRNC AND ADVISED WE HAD TO BE RETURNED TO PART OF OUR ORIGINAL ROUTING DUE TO ACTIVE MOA'S. THEY AMENDED RTE TO GO TO NEPTA; AND J58 TO CYY3 ARR. ADVISED DISPATCH. THEN N OF HRV; ENCOUNTERED WX; AND CHKED WITH ATC FOR RIDE RPTS. CLBED TO FL370 ONLY TO FIND MODERATE TURB. AFTER ENCOUNTER WITH TURB; I NOTIFIED DISPATCH OF TURB AND THEN RECEIVED THE NOTE FROM DISPATCH REMINDING US THAT WE WERE NOT IN AN ACFT THAT WAS OVERWATER EQUIPPED. WE ADVISED ATC (ZJX) AND WE WERE THEN CLRED DIRECT TO CEW AND ALONG THE WEST COAST TO THE C663 ARR. WE REACHED A POINT FURTHER THAN 50 MI OFFSHORE. OUR TURN BACK TO MAINLAND WAS ABOUT 45 DME S OF SEDAN ALONG J58. TOO MANY DISTRS; AND FORGOT WE HAD CHANGED TO NON OVERWATER ACFT.
